What do I need to brew that authentic cup?

The heart of the perfect filter coffee is of course the roasted and ground coffee - pick one combined with chicory for that thick decoction and rich mouthfeel you get in traditional Indian filter coffee (such as our 80% coffee, 20% chicory classic Vasavi Dew blend!). If you don't particularly enjoy the nuttiness of chicory, pure coffee works too. You'll need a moka pot or a South Indian filter to brew the decoction and it is best enjoyed in a davara with the coffee poured in from approximately a meter away for all that macrofoam goodness! Why should I use a South Indian filter and davara set?

Our coffee is compatible for brewing with a moka pot too if you prefer a thick espresso consistency. However, the South Indian filter is specifically created to facilitate a slow extraction process which gives the Indian filter coffee its identity. The presence of chicory creates the syrupy consistency characteristic of Indian filter coffee, differentiating it from other filter methods such as a Hario V60 or traditional pourover.

The davara and tumbler set allows for the pour which generates the macrofoam, softening the bitterness of coffee as well as enhancing the natural aroma. The tumbler is held by the rim and traditionally made of steel so if it's too hot to hold, it's too hot to drink!

Is this apparatus compatible with other coffees?

The coffee used in a South Indian filter is also compatible with a moka pot so any coffee with a medium-fine grind can be brewed using this apparatus. Medium and dark roasts do particularly well with this brewing method!

The davara and tumbler set is great if you want to create a macrofoam in your coffee or are combining it with milk.
